Sweet Tea Turkey for Thanksgiving!

Sweet Tea Roasted Turkey
SWEET TEA BRINED TURKEY
 
Sweet Tea Brine Ingredients
1 gallon sweet tea
1 cup kosher salt
3 navel oranges (wash & slice thinly)
2 tablespoons toasted coriander seed (I used powered coriander)  
1 teaspoon black peppercorns
2 bay leaves
8 cups ice
12-14 pound turkey (Thawed, rinsed, innards removed)
 
Preparation
Bring your sweetened tea to a boil and add orange slices, coriander, peppercorns and bay leaves. Remove from heat and add salt, stir until dissolved add ice and cool.
 
When the brine is cool place the brine in a 2 to 3 gallon bucket and immerse your thawed bird in the brine and cover with plastic wrap. Let brine for at least 10 hours. Some recipes call for 24 hour brining, which is perfectly fine.
 
Pat turkey dry and begin seasoning and stuffing your turkey to your taste.
I used herb butter (Rosemary, thyme & garlic)
(I stuffed my turkey with peeled apples, red & orange peppers and onion)
 
Herb Butter Ingredients
2 sticks butter (unsalted)
4 to 7 cloves of garlic
2 tbsp. thyme
3 tbsp. rosemary
 
Baking
Roast covered turkey at 450 degrees for 30 minutes and then lower heat to 350 degrees and roast for about two hours until the temperature at the thickest part of the leg registers 160F on a meat thermometer. My turkey cooked for 2 hours.
